Properties of freeze dried products

As long as a freeze dried food storage substance has been sealed in such a way that reabsorption of moisture is prevented, you can store the material even at room temperature for several years without refrigeration and without the substance getting spoiled. The almost total absence of moisture in the foods being preserved will prevent the microorganisms and enzymes from acting on the material and spoiling it. Compared to other food dehydration methods which use high temperatures, freeze dried materials are subjected to less damage. Also, this method does not result in toughening or shrinkage. Freeze drying has earned wide acceptance because the substance retains its nutritional values, smells and flavors. Dehydrated products can also be easily rehydrated.
